Spaghetti Aglio e Olio

A classic Italian pasta dish featuring spaghetti tossed with garlic, olive oil, red pepper flakes, and fresh parsley.

Approximately 400 calories per serving. Contains healthy fats from olive oil and is a good source of carbohydrates. To make it lighter, use less olive oil or add more parsley and garlic for flavor.

Ingredients:

  • 12 ounces spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/3 cup olive oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Grated Parmesan cheese, optional

Instructions:

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, following package instructions, usually about 8-10 minutes.
  2. While the spaghetti is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the hot oil and sauté until golden brown and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  4. Stir in the red pepper flakes and cook for another 30 seconds.
  5. Once the spaghetti is cooked, reserve 1 cup of pasta water, then drain the pasta.
  6. Add the cooked spaghetti to the skillet with the garlic and oil, toss to combine. Add reserved pasta water one tablespoon at a time to help the sauce coat the spaghetti evenly and achieve your desired consistency.
  7. Season with salt to taste and sprinkle with chopped parsley.
  8. Serve immediately with grated Parmesan cheese, if desired.
