Quick Babi Guling (Indonesian Roast Pork)

A simplified version of the traditional Babi Guling, perfect for a quick Indonesian meal with succulent pork seasoned with rich spices.

Ingredients:

  • 1 kg pork shoulder or belly, skin-on
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 tablespoon lemongrass, finely chopped
  • 1 teaspoon ginger, grated
  • 2 tablespoons shallots, finely chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 200°C (390°F).
  2. In a small bowl, mix garlic, turmeric powder, coriander powder, lemongrass, ginger, shallots, lime juice, vegetable oil, salt, and pepper to form a paste.
  3. Rub the spice paste generously all over the pork, ensuring an even coating. Gently work some of the paste into cuts made in the pork skin.
  4. Place the pork on a roasting rack set inside a roasting pan to catch drippings.
  5. Roast in the preheated oven for 30 minutes, or until the skin is crispy and the pork is cooked through.
  6. Remove from the oven and let rest for at least 5 minutes before slicing.
  7. Serve with steamed rice and a side of Balinese sambal for authentic flavors.
