Ingredients:

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, sliced
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced chicken breast and cook until golden brown and cooked through, about 8 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the canned diced tomatoes and Italian seasoning, stirring to combine.
  4. Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the grated Parmesan cheese until melted and the sauce is smooth.
  5. Add the cooked chicken back to the skillet, along with the fresh spinach. Stir everything together until the spinach is wilted, about 2 minutes.
  6. Combine the cooked pasta with the sauce and chicken in the skillet, tossing to coat the pasta well. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil leaves if desired.
