This meal is high in protein and fiber, making it a great option for maintaining muscle mass and promoting digestive health. Reducing salt to lower sodium intake can also be considered.

Ingredients:

  • 1 cup rolled oats
  • 2 cups chicken broth
  • 1/2 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, chopped
  • Fresh cilantro for garnish (optional)
  • Water (as needed)

Instructions:

  1. In a medium-sized pot, heat olive oil over medium-high heat.
  2. Add diced chicken breast to the pot and cook until browned on all sides, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 3 minutes.
  4. Stir in the grated ginger, soy sauce, salt, and black pepper.
  5. Pour chicken broth into the pot and bring to a boil.
  6. Once boiling, add the rolled oats and reduce the heat to a simmer.
  7. Cook for about 15-20 minutes, stirring occasionally and adding water if the porridge becomes too thick.
  8. Once the oats are soft and the porridge has reached the desired consistency, taste and adjust seasonings if necessary.
  9. Serve hot, garnishing with chopped green onions and fresh cilantro if desired.
