The popcorn is a low-calorie snack at about 150 calories per serving, mainly from the butter and oil. High in fiber and adaptable to various diets. To reduce calories, decrease the amount of butter.

Ingredients:

  • 1/2 cup popcorn kernels
  • 2 tablespoons coconut oil or any neutral oil
  • 1/4 cup unsalted butter
  • Salt to taste
  • Optional seasonings: garlic powder, paprika, nutritional yeast for cheesy flavor

Instructions:

  1. Heat the coconut oil over medium heat in a large pot with a lid. Add a couple of popcorn kernels to the oil and cover the pot.
  2. Once the test kernels pop, add the rest of the popcorn kernels in an even layer to the pot. Cover again.
  3. Once the popping starts, gently shake the pot back and forth over the burner every few seconds to ensure even cooking.
  4. When the popping slows to about 2 seconds between pops, remove the pot from the heat and let it sit for a moment to allow any last kernels to pop.
  5. Melt the butter in a separate small saucepan or microwave it until fully melted.
  6. Pour the melted butter over the popcorn and toss well to coat.
  7. Season with salt to taste and add any optional seasonings such as garlic powder, paprika, or nutritional yeast for an added flavor boost.
  8. Toss again to distribute the seasoning evenly.
