Ingredients:

  • 1 pound chicken breast, diced
  • 1 cup long-grain rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground ginger
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add diced chicken breast and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add chopped onion and sauté until translucent, about 3 minutes.
  4. Add minced garlic and ground ginger, sauté for another minute until fragrant.
  5. Stir in the rice and let it toast for 2 minutes, stirring occasionally.
  6. Return chicken to the pot and add chicken broth, soy sauce, and oyster sauce. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is cooked through.
  8. Season with salt and pepper to taste, and fluff the rice with a fork.
  9. Garnish with sliced green onions and serve warm.
