The recipe is protein-rich with a significant amount of fat due to the pork belly. It provides a good amount of vitamins from the kimchi. Adjust serving sizes and ingredients to meet specific dietary needs such as reducing sugar or soy sauce for lower sodium content.

Ingredients:

  • 1 pound pork belly, thinly sliced
  • 2 cups kimchi, chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tablespoons sugar
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large pan over medium-high heat.
  2. Add the pork belly slices and stir-fry until browned and crispy, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the minced garlic and thinly sliced onion to the pan, stir-frying until the onion is translucent, about 3 minutes.
  4. Stir in the chopped kimchi and cook for another 2 minutes.
  5. In a small bowl, mix gochujang, soy sauce, sesame oil, and sugar until well combined.
  6. Pour the sauce mixture over the pork and kimchi in the pan. Stir everything together and cook for another 5 minutes until the flavors are well combined.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and sesame seeds before serving.
