Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 cups buttermilk
  • 1 tablespoon hot sauce
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil, for frying
  • 4 sesame seed burger buns
  • 4 lettuce leaves
  • 4 slices of tomato
  • 1/2 cup mayonnaise
  • 1 tablespoon Sriracha sauce

Instructions:

  1. In a bowl, marinate the chicken thighs in buttermilk and hot sauce. Refrigerate for at least 1 hour to overnight.
  2. In another bowl, mix the flour, paprika, cayenne pepper, garlic powder, salt, and pepper.
  3. Remove chicken from marinade, letting excess buttermilk drip off. Dredge each piece in the flour mixture, ensuring they are fully coated.
  4. Heat vegetable oil in a large pan over medium-high heat. The oil should be about 350°F (175°C).
  5. Fry the chicken pieces for about 6-7 minutes per side or until golden and cooked through. The internal temperature should reach 165°F (75°C).
  6. In a small bowl, mix mayonnaise with Sriracha sauce.
  7. Toast the burger buns lightly.
  8. Spread the spicy mayonnaise on both halves of the buns.
  9. Place a leaf of lettuce on the bottom half of each bun, then top with a slice of tomato.
  10. Place the fried chicken thigh on top of the tomato.
  11. Finish by topping with the other half of the bun and serve immediately.
